This recipe takes patience, but it’s well worth the wait! Although the sauce can be cooked rather quickly, it’s best if you let the onions cook slowly to develop flavor and enrich the sauce. I came up with this stew after my girlfriend made a delicious batch of these meatballs. I prefer to make meatballs with lamb, sautéing them in rich, seasoned ghee which compliments the deeply flavorful dish. Take special care, however, to brown the meatballs on all sides to keep their structure.
