Maine Sea Urchins are close relatives to the Hokkaido Sea Urchins found off the shores of Hokkaido, Japan. Petite in size, this Bafun Uni produces small tongues with crisp, concentrated flavor. Highly prized throughout Japan, much of Maine's harvest is shipped fresh weekly to Tokyo's famed Toyosu Market. Before export, we reserve select domestic-grade portions known locally as "gold grade"—these represent less than ten percent of annual landings.
