Bear's Head (Hericium americanum) is a species with long spines and a branched fruiting body found only in North America. When young and fresh, these mushrooms are considered choice edibles with a flavor and texture similar to fish or lobster. They grow on hardwood chips and sawdust at colonization temperatures of 70-75°F and fruiting temperatures of 65-75°F.
