We hand picked the Grüner on September 7, 2023 at 22.5 brix and 3.38 ph. We whole-cluster pressed the grapes and cold-settled the juice in stainless steel before racking into our sandstone Jarre and fermenting until dry. The wine aged for 4 months in sandstone before it was filtered and bottled.
